One Pot Cooking


A while back, I got to craving Macaroni and Cheese, and knew the only way I'd be able to eat it was to make it.

I'd have preferred to make it with Canadian Cheddar Cheese, but I've had to settle for Chihuahua Cheese. The Macaroni and Cheese craving brought me back to cooking. I hadn't cooked in a few years.

Nothing fancy, but alot of basic nutritious meals cooked in one pan, and I've had to find creative substitutes from time to time, like making my own stewed tomatoes because I couldn't find canned ones.

My main meal is lunch, which I make when I get home from my teaching gig with the kindergarten children. Today's lunch was chicken and rice, made with fresh, instead of frozen green beans, red, yellow and green peppers, onions, rice and chicken.

It was very colourful, and very delicious.

Que rico! I cook the same way (also middle of the day for the main meal), with rice or pasta and veggies either stir-fried or steamed or both. Sometimes I add black beans or garbanzo beans, for the protein.
